Summer Sidedish: Colorful Carrots w/ Tzatziki
These vibrant roasted carrots are the perfect side dish for a family dinner, or to serve alongside grilled chicken or salmon. They’re colorful, flavorful, and totally satisfying-just make sure you have about 50 minutes to let them roast to perfection!

Preheat your oven to 400°F.
Peel and slice the carrots in half lengthwise, then spread them on a sheet pan along with the sliced red onion.
Drizzle with olive oil, then season generously with salt, pepper, onion powder, and garlic powder. Add the minced garlic and toss everything together to coat.
Roast in the oven for about 35 minutes, or until the carrots are fork-tender and slightly caramelized.
Let the carrots cool for 5 minutes, then drizzle generously with tzatziki.
Add a sprinkle of crushed red pepper flakes if you like a little heat, and enjoy!! xx
