This Balsamic Chicken Bake is simple yet flavorful! The juicy balsamic-marinated chicken paired with melty mozzarella, roasted tomatoes, and fresh basil is delicious on its own, or served over pasta with a drizzle of pesto.

Preheat the oven to 400°F.
Heat a skillet over medium heat with olive oil. Season the flattened chicken breasts with salt and pepper. Sear on medium for 1-2 minutes per side.
Place the chicken breasts in a baking dish. Add the tomatoes, balsamic vinegar, and more olive oil. Bake for 25 minutes, or until chicken reaches 165°F internally and tomatoes are softened and juicy.
Remove dish from oven, top each chicken breast with mozzarella slices, and return to oven for 7-8 minutes, until cheese is melted and bubbling.
Sprinkle with fresh basil and drizzle with balsamic glaze. Plate and enjoy as is, or serve over pasta with a spoonful of pesto for a heartier meal.
