Don’t know what to do with one leftover banana that’s about to go bad? I got you!! These banana mini muffins are so delicious, easy to make, and perfect as breakfast or a snack!
SERVING SIZE: 20 mini muffins
THE RECIPE:
Preheat the oven to 375 degrees.
In a blender, combine the banana, egg, melted butter, maple syrup (or honey!), vanilla extract, rolled oats, milk, baking soda, cinnamon, + salt.
Blend until smooth.
Grease the muffin pan to prevent it from sticking or line with mini muffin papers. Then, carefully pour the batter into the pan, filling each cup until about 3/4 full.
Bake for 12 minutes (if they’re mini sized) or until a toothpick comes out clean.
While the muffins are baking, make the unhealthy icing 😉 you can skip this part too!! Add powder sugar, softened butter, vanilla extract, and milk to a bowl and whisk until smooth.
Let muffins cool in the pan for 5 minutes. Transfer to a rack to cool completely.
Then, drizzle the icing on top of the muffins and enjoy!!
