Wanting a quick homemade treat? These carrot cake muffins are perfectly spiced and come together so easily. They’re naturally sweetened and topped with a creamy frosting for that classic carrot cake vibe!
SERVING SIZE: 12 muffins
THE RECIPE:
Preheat oven to 350°F and line or grease a muffin tin.
In a blender, add all of the ingredients except the grated carrots: egg, maple syrup (or honey), applesauce, Greek yogurt, olive oil, vanilla extract, oats, almond flour, baking powder, baking soda, cinnamon, and salt. Blend until smooth and combined.
Stir in the grated carrots.
Divide the batter evenly into the muffin tin, filling each about ¾ full. Sprinkle with walnuts and bake for 15–18 minutes, or until a toothpick comes out clean.
While the muffins are baking, let’s make the frosting! In a small bowl, mix together the cream cheese, Greek yogurt, and maple syrup until whipped and creamy.
Let the muffins cool completely before adding the frosting. Then spread or dollop on top.
Sprinkle with cinnamon and enjoy your delicious treat! 🥕
