These Chocolate Covered Yogurt & Fruit Bites are a refreshing and satisfying frozen treat made with creamy yogurt, fresh fruit, and a crisp chocolate shell. They’re perfect for a snack or healthier dessert, especially during the summer!
SERVING SIZE: MAKES 8 (4 of each flavor)
INGREDIENTS:
For blueberry honey: 1 cup yogurt 1 1/2 tablespoon honey 2/3 cup blueberries
For strawberry nut butter: 1 cup yogurt 2 tablespoon nut butter 1 cup diced strawberries
For the chocolate coating: 1 1/3 cup chocolate chips (your choice of milk or dark) 1 tbsp coconut oil
THE RECIPE:
Line a baking sheet or tray with parchment paper or a silicone mat.
In a bowl, stir together 1 cup yogurt and 1½ tablespoons honey. Gently fold in the blueberries.
In another bowl, mix 1 cup yogurt with 2 tablespoons nut butter until smooth. Fold in the diced strawberries.
Use a small spoon or cookie scoop to drop bite-sized portions of the yogurt mixtures onto the lined tray (about 4 bites of each flavor). Keep the two flavors separate.
Place the tray in the freezer and freeze for 2–3 hours, or until the yogurt bites are completely solid.
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20–30 second intervals, stirring between each, until smooth and fully melted.
Remove the frozen yogurt bites from the freezer. Working quickly, dip each bite into the melted chocolate using a fork or spoon to coat, then place it back on the tray. (You can fully coat or drizzle if preferred.)
Return the tray to the freezer for another 15–30 minutes, or until the chocolate is set.
Enjoy straight from the freezer or store in an airtight container in the freezer for up to 2 weeks.
