Creamy Butter Beans

To prep, mince your garlic, dice your white onion, and chop your basil and spinach.
Add olive oil to a saucepan over medium heat on the stove. Then add in the garlic and onion and sauté for 5 minutes until translucent.
Add in your tomato paste and mix together.
Then pour in half-and-half and water. Mix and simmer for 2-3 minutes while stirring.
Next, add in your jumbo butter beans and spinach. Let it simmer for 2-3 minutes.
Top with chopped basil and grated parmesan.
Enjoy on its own or with a slice or two of toast!
