These nachos are a fun twist on the classic gameday snack, swapping tortilla chips for crispy roasted sweet potato rounds.

THE RECIPE:
Preheat oven to 375°F. Peel and slice the sweet potatoes.
Toss sweet potato slices with olive oil, chili powder, and salt. Spread evenly on a baking sheet in a single layer. Bake for 25–30 minutes, flipping halfway, until tender and lightly crisped.
Remove sweet potatoes from the oven and sprinkle shredded cheese evenly over the top. Return to oven for 5 minutes, or until cheese is melted and bubbly.
Heat a skillet over medium heat. Add ground beef and cook until browned, about 5–7 minutes. Stir in taco seasoning and a splash of water if needed to coat. Simmer 1–2 minutes.
Plate the sweet potatoes and top with the seasoned ground beef plus any optional toppings (avocado, Greek yogurt, green onions, red onion, tomatoes, black beans).
