Today I’m sharing my great grandmother’s chicken soup recipe, but with a high protein twist! This dish is so nostalgic for me and I love that I can pass along my family recipe while packing in fiber and protein!
SERVING SIZE: 4
THE RECIPE:
Prep your veggies by dicing your onion, celery, and carrots. I also recommend shredding your chicken beforehand so it’s ready to go!
Add butter into a stockpot over the stove on low-medium heat. Then add in your veggies and seasonings of garlic powder, salt, and pepper. Sauté for 5-6 minutes.
Stir in your flour and add in your chicken broth.
Bring to a boil then bring back to low to medium heat if you increased it, and add your uncooked Barilla Protein+ stars to the pot. Simmer for 7-9 minutes then add your shredded chicken.
Add in half-and-half, and then one cup of drained and rinsed white beans.
Stir in your Better Than Bouillon and lemon juice and simmer for another 2-3 minutes or until the pasta is your preferred texture.
Then take one more cup of white beans, drained and rinsed, and put them into a blender. Pulse blend once or twice and then add them to the pot.
Stir and then serve with some fresh cracked pepper and shredded parmesan if you’d like! Then enjoy!! xx

2tbspBetter Than Bouillonalt. Vegeta seasoning
1/2tbsplemon juice
1/2tspsalt
1/2tsppepper
1/2tspgarlic powder
1/2cuphalf-and-half
