If there’s one bowl you’ll keep coming back to for lunch or dinner… it’s this! Plus, you will want to cook this simple chicken on repeat. This bowl is packed with nutrients, freshness and flavor. This “build your own” bowl is perfect for hosting or meal prep, too!

THE RECIPE:
For this recipe, we’ll be breaking it into sections for each part of the bowl!
Prepping the veggies:

Halve cherry tomatoes.
Dice romaine lettuce.
Dice red onion and cucumber. Mince garlic.
Homemade tzatziki:
Squeeze half a lemon into greek yogurt.
Add olive oil, salt, and minced fresh garlic.
Place a paper towel down on a cutting board (or counter surface). Using a grater, shred the cucumber over the paper towel. With the cucumber in the center of the towel, bunch the towel up and squeeze the excess water out over the sink.
Then, add your shredded cucumber into the tzatziki and mix!

Cooking the perfect chicken:
Add olive oil to a pan over the stove and turn the heat on medium. I like to wait until the pan and oil gets hot before putting my chicken on the pan.
Place chicken breast in the pan.
Add seasonings like pepper, garlic powder, Lawry’s seasoned salt, and chili powder on to each side of the chicken breast.

Sear the chicken on medium for 3 minutes on each side. Then switch to low heat and let them cook for 8-10 minutes more, depending on how thick or thin the chicken breasts are, flipping once in the middle. Always double check that it’s cooked through!

When you take the chicken out of the pan, don’t wash the pan just yet! Put the chicken on a cutting board and slice it up however you like. Deglaze the same pan by adding a little water.
Toss the diced chicken back in. On low heat, cook for an extra minute or two. This keeps the chicken nice and juicy and flavorful with each bite seasoned!


Building the bowl:
Now it’s time to build the bowl! Portion how you like here. Add romaine, cucumber, tomatoes, your sliced chicken, red onion, feta, and your homemade tzatziki.
This is optional, but for extra flavor, drizzle olive oil and pesto on top! Then add fresh pepper and ENJOY!
