Meal Prepped Green Goddess Chicken Salad
A fresh and flavorful twist on classic chicken salad. Inspired by and hand-picked straight from my garden, this green goddess chicken salad is packed with vibrant herbs and perfect for easy meal-prep lunches!!

For Meal Prep (per jar – 32 oz mason jars)
In a large bowl, add the shredded chicken, diced spinach, mayonnaise, Greek yogurt, Dijon mustard, olive oil, and lemon juice. Mix until the chicken is evenly coated and creamy.
Finely chop the basil, green onion, parsley, and dill, then add them to the bowl.
Stir everything together until fully combined. Season with salt and pepper to taste and mix again.
For meal prep, spoon the chicken salad into the bottom of mason jars. Layer with arugula, diced cucumber, walnuts, and cheese on top.
Enjoy your chicken salad right away with crackers, or seal and store in the fridge for an easy grab-and-go meal!
