Craving Fajitas?! I GOT YOU! What I love about this one-pan fajitas recipe is that it’s simple it is to make and packed with nutrients! It packs veggies and protein into one easy dish.
SERVING SIZE: 2 (or 3!)
THE RECIPE:
Set oven to 400°F.
Thinly slice your red onion, red pepper, yellow pepper, and chicken breast.
Put the sliced veggies and chicken breast onto a sheet pan. Pour 1 tbsp olive oil and 1.5 tbsp taco or fajita seasoning on top. Toss so seasoning and oil are evenly distributed on the veggies and chicken.
Pop the pan in the oven and bake for 25 minutes.
This step is optional, but I love to make this sauce for the fajitas while I’m waiting for the chicken and veggies to bake. Mix together Greek yogurt, lime, hot sauce of choice, salt and olive oil.
I like to heat up each tortilla directly on top of the stove, but feel free to use a pan or even microwave them.
Remove fajita tray from the oven.
Form into tacos, in a bowl or eat how you wish!
Optional: add any additional toppings you like! I added black beans, cheese, avocado and cilantro.

½limesqueezed
½tbspolive oil
½tspsalt
½tbsphot sauce of choice
