Place peanuts in an air fryer (my go-to!!) or oven at 400°F for about 3 minutes, until lightly toasted and fragrant. Set aside for later.
While peanuts are toasting, dice the carrots and green onion.
Heat a skillet over medium heat. Add the ground turkey, carrots, and green onion. Cook, breaking it apart with a spatula until browned and fully cooked.
Pour in the low sugar teriyaki sauce along with a small splash of water. Stir to coat the turkey mixture and let it simmer for 2–3 minutes until slightly thickened.
Lay out your romaine leaves and spoon the turkey meat evenly into each leaf.
Sprinkle toasted peanuts over each lettuce cup and drizzle with chili oil to taste.
Enjoy this perfectly crunchy and savory meal!!
