THE RECIPE:
Sauté ground turkey on a pan over medium heat on the stove with a little oil in the pan.
Cook the ground turkey alone for 4-5 minutes and then add 1 tbsp taco seasoning and 1/4 cup water so the taco seasoning combines evenly throughout the meat. Stir.
Continue to cook for another 3-4 minutes, stirring throughout.
Now is a perfect time to start the homemade queso cream sauce! Add the cottage cheese, Mexican blend cheese, taco seasoning, and water to a blender. Blend.
Cook rice according to the instructions of whatever package you have. Once cooked, mix ½ cup salsa of your choice into the rice.
Drain and rinse black beans.
Dice red onions.
Split between 2 bowls, add in the salsa-mixed rice, black beans, diced red onions, and cooked ground turkey.
Optionally, add avocado and cilantro on top of each bowl. Then drizzle on your homemade queso cream sauce.

Now is a perfect time to start the homemade queso cream sauce! Add 1 cup cottage cheese, ½ cup mexican cheese, 1 tbsp taco seasoning, and ⅓ cup water to a blender. Blend.
Cook rice according to the instructions of whatever package you have. Once cooked, mix salsa of your choice into the rice.
