In a blender, combine the banana, freshly cut pineapple, lemon juice, Greek yogurt, coconut water, chia seeds and fresh ginger (if using).
Blend on high for about 30–60 seconds, or until the mixture is creamy and well combined. Add more coconut water if you want a thinner consistency.
