These cozy zucchini bolognese boats are packed with veggies and nutrients. They’re also so delicious, you’ll want to eat them right off the tray. Pair with caesar salad or arugula salad on the side for a yummy and well-balanced dinner.

THE RECIPE:
Preheat the oven to 400°F.
Slice your zucchinis, cutting off the ends first, then long ways in half.
Use a spoon to carve out a tiny bit in the middle, so the bolognese has a place to fit.
Throw your zucchini halves in the oven before starting the sauce. Let them roast for 30-35 minutes.
Now onto the sauce! Dice half an onion and 2 large carrots.
Add olive oil to a pan and heat over the stove. Throw your diced carrots and onions into the pan and sauté 3-6 minutes until they’re browned.
Mince 4-6 cloves fresh garlic and add to the pan, then pour in your marinara sauce.
Add 1 ½ cups ready-to-eat lentils to the pan, or if you’d prefer to add meat, you can add 1 ½ cups cookedground beef or turkey instead! In the photos here, I did both options:)
Mix in your lentils or meat and let the sauce simmer for another 4 minutes.
Once your zucchini boats have been in the oven for 30-35 minutes, take them out. They should be nice and soft so you’re able to cut through them!
Fill the boats with your homemade bolognese sauce and add shredded mozzarella and grated parmesan on top.
Put your zucchini boats back in the oven for 4-6 minutes to let the cheese melt.
Now the best part! Take your zucchini boats out of the oven and savor that flavorful first bite!
