10 Minute Summer Pasta Salad

This salad is the most refreshing & easy dish that will keep you feeling full long after! It literally took me less than 10 minutes to make!

Ingredients
  

  • 3.5 cups arugula
  • 1 cup pasta, uncooked
  • 1.5 cup chicken, shredded (I used rotisserie)
  • 1/2 cup mozzarella balls
  • 1/4 cup green onion, diced
  • 1 cup tomatoes, diced
  • 2 tablespoons pesto
  • 1/2 cup avocado
  • 1/4 lemon, squeezed
  • Seasonings: salt and pepper to taste

Instructions
 

  • Cook your pasta according to the package. While your pasta cooks, prep your other ingredients to save time!
  • Prep your ingredients by shredding your chicken and dicing your green onion and tomatoes.
  • Add your arugula, pasta, rotisserie chicken, mozzarella, green onion, tomatoes, pesto, avocado, squeezed lemon & seasonings to a large bowl.
  • Toss & enjoy!! xx
