Chicken Caesar Pasta Salad

This Chicken Caesar Pasta Salad is one of those easy meals I throw together when I want something filling but still fresh. The crispy chicken and tangy dressing just work so well together, especially with that squeeze of lemon at the end!

Ingredients
  

  • 2 cups rotisserie chicken shredded
  • 1 ½ tbsp olive oil
  • salt and pepper to taste
  • 2 cups rotini pasta cooked and cooled
  • 6 cups packed lettuce mix of arugula and romaine
  • 1/4 cup Caesar dressing
  • 1/2 cup grated Parmesan cheese
  • 1/2 lemon freshly squeezed
  • extra pepper to taste

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the shredded rotisserie chicken, season with salt and pepper, and cook for 3–5 minutes until edges are golden and slightly crisp. Remove from heat and let cool slightly.
  • Once the chicken has cooled for a few minutes, place it in a large mixing bowl with the lettuce.
  • Add in the Caesar dressing, Parmesan cheese, lemon juice, and extra pepper. Gently mix until everything is evenly coated.
  • Divide into bowls or plates and enjoy immediately. This one is great for a summer side dish or easy lunch!
