Ingredients
  

  • 4 rice cakes
  • 2/3 cup dark chocolate chips
  • 1/2 cup peanut butter
  • 2 tablespoons coconut oil

Instructions
 

  • Break the rice cakes into small pieces and place them in a large mixing bowl.
  • In a microwave-safe bowl, combine the dark chocolate chips, peanut butter, and coconut oil. Heat in 20-second intervals, stirring in between, until everything is fully melted and smooth.
  • Pour the melted mixture over the broken rice cakes and stir gently until all pieces are coated.
  • Lightly grease a 12-cup muffin tray or line it with muffin liners. Evenly press the rice cake mixture into each cup.
  • Refrigerate for at least an hour or until the treats are firm and set.
  • Once chilled, remove from the tray and enjoy!
