Creamy Coconut Peanut Stir Fry Noodles

We love a 15 minute one pan meal!!! I go meatless on mondays 🌱 so this was my recipe of the day today! BUT, chicken and/or eggs would be so good in here, too. These noodles are extra creamy because of the coconut milk, and filled with amazing flavors. Easy and quick!! Happy MONDAYYY!!!!

Ingredients
  

  • 2 cups broccoli, diced
  • 1/2 cup onion, diced
  • 1 1/2 cup carrots, shredded
  • 1 teaspoon sesame oil
  • 1.5 cups water
  • 1.5 cups coconut milk
  • 2-3 cloves garlic
  • 1 1/2 tablespoons peanut butter
  • 1.5 tablespoons soy sauce
  • 1 tablespoons sesame seeds
  • 1/2 teaspoon red pepper flakes
  • 1.5 cups rice noodles, or about 6-8 ounces

Instructions
 

  • Lets make Creamy coconut peanut stir fry noodles - vegan and took me 15 minutes and only using ONE pan so it’s quick with an easy clean up!
  • I sautéed brocoli, carrots and onion with a little garlic. Then I added some water and coconut milk, added the Thai noddles and covered.
  • I added a scoop of peanut butter, soy sauce, red pepper flakes, sesame seeds, onion and garlic powder. 
  • It’s SO good and as a non vegan option you can add chicken or eggs too!
