Dairy Free Roasted Garlic Creamy Protein Pasta
This Dairy Free Roasted Garlic Creamy Protein Pasta is creamy thanks to the silken tofu, flavorful from the roasted garlic, and is packed with protein from the tofu and nutritional yeast. Plus, it's so easy to make!

Preheat oven to 400°F.
Toss the garlic cloves with the olive oil and a small pinch of salt in a baking dish or sheet. Spread in one layer and roast for 25 minutes, until cloves are very soft and lightly golden.
Add the garlic, any excess olive oil from the pan, tofu, nutritional yeast, milk, salt and pepper in a blender or food processor. Blend until smooth and creamy.
Bring a large pot of salted water to a rolling boil. Add the pasta and cook to package directions. Reserve 1/2 cup of the pasta cooking water. (Note: this sauce makes double. If you want to serve 4, double the pasta amount).
Heat a large skillet over low–medium heat. Add the drained pasta, pasta sauce, and peas to the skillet. Toss to coat. If the sauce feels too thick or clings without covering, slowly add the reserved pasta water.
Plate the pasta and serve warm!
