Flourless Banana Oat Pancakes

The healthiest pancakes you ever did eat!!! And so easy to make... and of course DELICIOUS.

Ingredients
  

  • 1 ripe banana
  • 1 large egg
  • 2 Tbsp old-fashioned oats
  • ½ tsp ground cinnamon
  • 1 Tbsp almond milk or any milk of choice
  • ¼ tsp pure vanilla extract
  • Pinch of baking powder about ⅛ tsp
  • Organic dark maple syrup for serving
  • Coconut oil spray or a little butter for cooking
  • Optional add-ins: fresh berries sliced banana, or dark chocolate chips

Instructions
 

  • Mush the one ripe banana into a bowl. Mix in one egg, and the rest of the ingredients. Here’s the part you need to listen up- when you put oats in your pancakes, the batter needs to sit for a bit for them to soak up. This is how they’re going to be a little thicker than your regular healthy pancakes, so wait like 20 minutes if you can before you make them so the batter can settle. If you want to REALLY get into these pancakes, you can always blend the batter, too (but it’s not necessary and I def don’t do that every time).
  • On medium heat, spray a little coconut oil on to your pan. (or butter hehe) Pour batter on to your pan and make your pancakes as big or small as you want them!
  • Top with a little more cinnamon, maple syrup, and fruit of your choice.
