High Protein Buffalo Chicken Dip

Ingredients
  

  • 1 1/3 cup cottage cheese, (blended with a splash of water)
  • 2 cups shredded chicken
  • 1 cup mozzarella
  • 1/2 cup buffalo sauce
  • 1 tablespoon ranch seasoning powder
  • Seasonings: Onion powder, garlic powder, salt

For the Toppings

  • 1/2 cup Mexican blend cheese, to top
  • 1/4 cup mozzarella to top
  • 1/3 cup panko bread crumbs
  • 1/4 cup green onion, diced
  • Optional: 1 jalapeño, sliced

Instructions
 

  • Preheat your oven to 400 degrees.
  • In a blender or food processor, blend the cottage cheese with a splash of water until smooth. Ensure the chicken is finely shredded and set it aside.
  • In a large mixing bowl, combine the blended cottage cheese, shredded chicken, buffalo sauce, ranch seasoning powder, onion powder, garlic powder, and salt. Mix until all ingredients are well combined.
  • Transfer the mixture into a baking dish and spread it out evenly to create a smooth layer.
  • Top with your Mexican cheese blend, mozzarella, panko bread crumbs, and sliced jalapeño.
  • Bake in the preheated oven for 20-25 minutes or until the edges are bubbly and the cheese is melted and lightly golden brown.
  • Once removed from the oven, sprinkle the diced green onions over the top of the dip.
  • Serve with your favorite chips and enjoy! xx
