Lemon Parm Chicken Salad

This salad is one of my perfect go-to meals, so easy and fast to make. It's the perfect dish if you have some leftover rotisserie chicken but are looking for a simple, refreshing recipe! And I promise - homemade croutons will make all the difference and make this salad something you CRAVE!!

Ingredients
  

  • 4-5 cups butter lettuce, finely chopped
  • 1 slice sourdough (to make croutons)
  • 1.5 cups rotisserie chicken shredded
  • 2 tablespoons olive oil
  • 1/3 cup parmesan
  • 1/2 lemon, squeezed
  • 1 avocado, sliced
  • 2 tablespoons Caesar dressing
  • Seasonings: garlic powder, salt and pepper to taste

Instructions
 

  • Wash and pat dry your butter lettuce, and finely chop into pieces. I personally love having smaller bite size pieces to make it a better salad to dressing ratio!
  • Shred your rotisserie chicken and add to a pan with a drizzle of oil, salt and pepper.
  • Stir for a few minutes, till golden brown. Go ahead and remove from heat, then set aside.
  • For your homemade croutons, dice your sourdough (or bread of choice) slice into small bite size pieces and add to a pan with a drizzle of olive oil, garlic powder, and salt and pepper.
  • Stir for a few minutes, till golden brown and crispy and remove from heat!
  • Pit your avocado and dice.
  • In a mixing bowl, combine your lettuce, avocado, olive oil, parmesan, caesar and squeezed lemon. Sprinkle in some more pepper and mix well!
