Loaded Turkey Tostadas

I promise you will be so obsessed with these turkey tostadas!! They are so good they almost remind me of Taco Bell - with a healthified twist of course 😉 They’re packed with protein and full of flavor - perfect for your Taco Tuesday, lunch or dinner!!

Ingredients
  

  • 1 package ground turkey
  • 1 package taco seasoning (appx. 3 tablespoons)
  • 4 tortillas
  • 1/2 cup black beans, strained & rinsed
  • 1/3 cup shredded Mexican blend cheese (if you don’t have that a mixture of Monterey Jack & Cheddar work perfect!)
  • 1/4 cup green chiles, diced
  • 2 cup iceberg lettuce, finely chopped 
  • 1/2 avocado
  • 1/2 cup chipotle sauce
  • 1/4 cup red onion, finely sliced

Instructions
 

  • First, heat your skillet up and drizzle a little bit of olive oil to cook your ground turkey. 
  • Season with your package of taco seasoning! My best recommendation for this is to follow according to package!! 
  • Sauté for about 7-10 minutes or until the turkey is cooked through.
  • While your turkey cooks, prep your veggies by thinly slicing your lettuce and red onion, and dicing your green chiles.
  • Remove your turkey from heat & set aside. 
  • Then in another pan with avocado oil, fry your tortillas to get them nice and crispy. 
  • Fry for a minute on each side, then pat the excess oil with a paper towel. 
  • Optional: heat your beans on the stovetop for about 1-2 minutes before adding to the tostada. 
  • Add your rinsed and strained black beans to your tortillas and smush directly onto the tortilla using a fork. 
  • Layer on your cooked ground Turkey and top with shredded cheese. 
  • Melt your cheese to get the gooey goodness in the microwave, oven, or even air fryer.  
  • Top with chopped green chiles, lettuce, & avocado. 
  • Once that’s done, you’re ready to finish with a drizzle of chipotle sauce & your sliced red onions. Enjoy!! xx
