Low Carb Mashed Potatoes

This is such an easy side dish to make and a fan favorite because nobody will ever know there is cauliflower in these mashed potatoes. Extra nutrients, less carbs!

Ingredients
  

  • 3 cups peeled and diced potatoes
  • 3 cups diced cauliflower
  • 2 tbsp butter
  • 1 clove of garlic minced
  • Seasoning: salt, pepper, onion powder
  • 1/2 cup cheese I used a mix of cheddar and parm
  • 1/4 cup green onion diced

Instructions
 

  • Add potatoes and cauliflower to a pot of water and boil for approximately 15 minutes, or until fork tender
  • Then, use an immersion blender to mash the boiled potatoes and cauliflower (you can do this right in the pot) and blend until fully combined.
  • Then add in butter, garlic, onion powder, salt and pepper and mix well
  • Then add your mixture to a cast iron pan and top with a small sprinkle of cheddar and parmesan cheese and bake in the oven at 475 degrees for about 5 minutes or until your cheese is completely melted and starts to get a little brown!
  • Top with green onion and oh my goodness you guys...this is SO good! Hope you enjoy!
