Mediterranean-Inspired Breakfast Plate

Ingredients
  

  • 2 Soft-medium boiled eggs
  • 1/4 cup Burrata
  • 1 tbsp Olive Oil

For the Salad

  • 1/4 cup Tomatoes diced
  • 1/4 cup Cucumber diced
  • 1/4 cup Red Onion diced
  • 1/2 tsp Olive Oil
  • 1/2 tsp Red Wine Vinegar

For Serving

  • Fresh Dill
  • Salt & Pepper to taste

Instructions
 

  • Soft boil your eggs by filling a medium pot with water and bring to a gentle simmer over medium heat. Using a slotted spoon, carefully lower the eggs into the water. Simmer for 7-8 minutes for soft-medium yolks (6 minutes for runnier yolks).
  • Once done, transfer the eggs to a bowl of ice water to cool and stop further cooking.
  • Create your meditteranean salad by dicing your tomatoes, cucumber, red onion then combine with a 1/2 a teaspoon of olive oil and red wine vinegar. Optional: For extra freshness, stir in some chopped fresh dill!
  • Toast the slice of whole wheat bread to your liking. Slice the burrata and set aside.
  • Peel the cooled eggs and cut them in half.
  • Arrange the salad on a plate, top with burrata, and place the halved eggs on the side. Drizzle with the remaining tablespoon of olive oil and season with additional salt and pepper if needed.
  • Serve with your toasted bread & enjoy! xx
