Mini Frozen Blueberry Cheesecake Bites

The perfect healthy sweet treat packed with protein and are low sugar, and low carb. These are a must try!!The key is using @ratiofood dairy snacks - for the crust I used their keto friendly crunch, and for the “cheesecake” I did their delicious blueberry protein dairy snack (which has 25g of protein per cup!), but you can do keylime (so good), strawberry, or whatever flavor you like best.

Equipment

  • Mini muffin tray

Ingredients
  

  • 2 :ratio Blueberry Protein Dairy Snack cups or yogurt of choice
  • 1.5 cups :ratio Trio Vanilla Almond Crunch Cereal or granola of choice
  • 2 tablespoons coconut oil or melted butter in blended granola
  • Optional: granola to top
  • Optional: blueberries to top

Instructions
 

  • In a blender, pulse the cereal or granola until finely ground to create a crust-like texture.
  • Transfer the blended crust mixture to a bowl and mix in 2 tablespoons of melted coconut oil until well combined.
  • Line a mini muffin tin with cupcake liners for easy removal.
  • Spoon an even amount of the granola mixture into each cupcake liner. Press down firmly to create a compact, even layer using your fingers or a spoon, or whatever you have handy!
  • Scoop an even amount of the yogurt mixture over the granola crust.
  • Optional: Sprinkle a little extra granola or add blueberry on top of each yogurt-filled cup for added texture and garnish!
  • Place the muffin tin in the freezer for at least 30-40 minutes to allow the bites to set.
  • Once set, remove the mini yogurt bites from the muffin tin. Peel off the cupcake liners gently. Feel free to enjoy the Blueberry Cheesecake Bites straight from the freezer! xx
