One Pan Mediterranean Meal Prep Orzo Dump & Bake

This bake is so perfectly creamy and packed with so many nutrients. I think I’ve really outdone myself with this one – I’m getting so hungry all over again just writing this out😮‍💨 And the best part? It’s one pan – perfect for those weeknight dinners (& for meatless Monday too ;))

Ingredients
  

  • 1 1/3 cup cherry tomatoes diced
  • 1/2 cup red onion diced
  • 1 cup asparagus diced
  • 1 2/3 cup water
  • 1 cup orzo uncooked
  • 2 cup spinach
  • 1 cup feta reserve some to top
  • 2 tablespoon olive oil (1 in beginning, 1 at end with feta)
  • Mediterranean blend seasoning -
  • Seasonings: garlic powder, pepper, salt

Instructions
 

  • Preheat the oven to 375°F.
  • Prepare the vegetables by dicing the cherry tomatoes, red onion, and asparagus.
  • In a baking dish, toss the diced vegetables with 1 tablespoon of olive oil, Mediterranean seasoning, a squeeze of lemon juice, and a sprinkle of garlic powder, salt, and pepper.
  • * Bake for 20 minutes until slightly softened.
  • Remove the baking dish from the oven and stir in the uncooked orzo, water, spinach, another squeeze of lemon, and additional seasonings to taste. Mix well.
  • Return the dish to the oven and bake for 15 minutes, or until the orzo is tender and the liquid is mostly absorbed. Stir halfway through if needed.
  • Sprinkle the feta cheese over the top and drizzle with the remaining tablespoon of olive oil. Mix well
  • Bake for another 4-5 minutes until the feta softens and the dish is heated through.
  • Top off with parsley. Enjoy this vibrant and creamy Mediterranean-inspired meal!
