Passion Fruit Egg White Martini

When I was in France, I had a drink just like this - so when I got home I knew I had to recreate it! I was immediately inspired by this super light, refreshing tequila drink that wasn't as punchy as a margarita! I promise you will LOVE it! And don't worry - don't get intimidated by the egg whites, it'll brighten up your drink and is super easy to incorporate!

Equipment

  • Cocktail Shaker

Ingredients
  

  • Ice, for shaker & serving
  • 3 shots passion fruit juice
  • 2 shots tequila blanco
  • 1/2 lime, to squeeze
  • 1 teaspoon simple syrup
  • 1 egg white
  • Optional: orange peel or passion fruit to garnish

Instructions
 

  • Chill your martini glasses beforehand - if you don't have time to put them in the freezer, add ice to your glasses and dump it out when you're ready to pour your cocktail into the glass!
  • NOTE: If you're cautious of getting shells in the shaker or breaking your yolk, feel free to separate your yolk from the egg white in a separate bowl. But if not, you can easily do it right over the shaker for less cleanup!
  • In a shaker, combine your ice, passion fruit juice, tequila, lime juice, simple syrup & egg yolk. Shake until the mixture becomes frothy (meaning the egg whites are incorporated).
  • Optional - remove the ice from the glass, if added before to chill.
  • Strain and pour into your glasses. Garnish with your optional orange peel & enjoy!! xx
