Quinoa Veggie Bake

Today, we’re making a quinoa veggie bake that’s absolutely perfect for fall! It’s cozy, nutritious, and super easy to prep.

Ingredients
  

  • 2 large carrots diced
  • 1 large zucchini diced
  • 1/2 onion diced
  • 1 cup broccoli florets
  • 1 sweet potato diced
  • 1 cup mushrooms sliced
  • 2 cups uncooked quinoa
  • 2 cups water
  • 2.5 cups chicken broth
  • 1 tsp Vegeta or substitute with extra garlic powder, onion powder, and salt, plus a bit of chicken bouillon
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp butter
  • 1 clove crushed garlic
  • 1/4 cup chopped parsley save some for garnish
  • 1/4 cup chopped chives save some for garnish
  • 1/2 cup shredded cheese I used cheddar and mozzarella blend
  • 1 avocado sliced

Instructions
 

  • Preheat the oven to 400°F.
  • Dice all your veggies: carrots, zucchini, onion, broccoli, sweet potato, and mushrooms.
  • In a large glass baking dish, combine the uncooked quinoa, all the chopped veggies, garlic powder, onion powder, Vegeta, salt, and pepper.
  • Pour in the water and chicken broth. Mix everything together until well combined.
  • Bake for 50 minutes.
  • Remove from the oven, add butter, crushed garlic, extra seasoning if needed, parsley, chives, and cheese. Mix in some of the cheese and top with the rest for a crispy, golden layer.
  • Return to the oven and bake for a few more minutes until the cheese is melted and golden.
  • Top with avocado slices, fresh parsley, chives, and green onions.
