Ingredients
  

  • 1 cup cherry tomatoes
  • 1/2 cup burrata cheese
  • 2 cups arugula
  • 1 tbsp olive oil plus more for drizzling
  • Salt and pepper to taste
  • Optional: toasted bread or crisps for serving

Instructions
 

  • In a pan over medium heat, sauté cherry tomatoes with olive oil, salt, and pepper until they begin to blister and brown (about 5–7 minutes).
  • In a bowl, toss arugula with a light drizzle of olive oil.
  • Top arugula with warm roasted tomatoes, then gently add burrata on top.
  • Season with extra salt, pepper, or a drizzle of olive oil if desired.
  • Serve as-is or with a crispy slice of bread. Enjoy!
