Southwest Sweet Potato Bowl

Whenever I’m not feeling creative with dinner, this bowl is a go-to recipe we always have on rotation. It’s super versatile—mix and match your favorite toppings! This time, we went with a Mexican-style bowl featuring avocado and pico de gallo, but you could easily switch it up to a burger bowl with Thousand Island dressing, lettuce, and tomatoes, or even an Asian-inspired bowl with Japanese sweet potato. The sky's the limit! Keep it delicious and simple, and you’ll find yourself coming back for more.

Ingredients

  • 10-12 ounces ground beef
  • 1 sweet potato diced and baked at 400°F for 23-25 minutes
  • 1/2 cup cheese, to top
  • 1 avocado
  • 2 tablespoons Greek yogurt (a healthier sour cream option)
  • Red onion or green onion, finely chopped to top
  • Pico de gallo, to top
  • sea salt, chili powder and garlic powder for both the sweet potatoes and meat
  • Optional: jalapeno to top

Instructions

  • Preheat the Oven: Preheat your oven to 425 degrees.
  • Wash, peel, and dice the sweet potato into even-sized pieces.
  • Place the diced sweet potato on a baking sheet. Drizzle with olive oil and season with garlic powder, sea salt, and chili powder. Toss to coat evenly.
  • Bake in the preheated oven for about 23-25 minutes, tossing halfway through to ensure even crisping.
  • While the sweet potato bakes, heat a skillet over medium heat. Add a splash of olive oil to prevent sticking.
  • Sauté the ground beef with your chosen seasonings (like @harmonyblends, sea salt, and chili powder) for 7-10 minutes or until fully cooked through.
  • Sprinkle shredded cheese on top and cover with a lid (or microwave after plating) briefly to melt the cheese if desired.
  • Plate the baked sweet potato and top it with the ground beef. Finish with sliced avocado, a dollop of Greek yogurt, pico de gallo, red onion or green onion, and optional jalapeno!
  • Enjoy!! xx
