Total Time 35 minutes
Course Appetizer, Snack
Servings 6

Ingredients

  • 2 large sweet potatoes cut into fries
  • 1 lb ground turkey
  • 1 packet taco seasoning or homemade taco seasoning
  • 1 zucchini chopped (or any veggies you have on hand)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup shredded cheese cheddar, Mexican blend, or your favorite

For the Toppings

  • Green onion chopped
  • 1 avocado diced
  • Greek yogurt or sour cream
  • Buffalo ranch sauce or your favorite dressing
  • Hot sauce if you like a kick!

Instructions

  • Preheat your air fryer to 400°F. Add sweet potato fries in a single layer, and cook for 15-20 minutes, shaking halfway through, until crispy and golden.
  • While the fries are cooking, heat a pan over medium heat and cook the ground turkey with taco seasoning according to package instructions, breaking up the meat as it cooks. Set aside once browned.
  • In another pan, heat olive oil over medium heat. Add the chopped zucchini (or other veggies) and sauté for 3-4 minutes until tender. Season with salt and pepper to taste. Set aside.
  • Once the fries are done, spread them evenly on a cookie sheet or large baking dish. Layer with shredded cheese, ground turkey, and sautéed veggies.
  • Place the sheet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep an eye on it to avoid burning!
  • Once melted, remove from the oven and top with your favorite toppings like chopped green onion, diced avocado, Greek yogurt or sour cream, buffalo ranch, and a drizzle of hot sauce.
