Turkey Sausage & Vegetable Stew

This one-pot meal is incredibly easy to whip up on any day of the week! Hearty, healthy, and comforting, it's the perfect dinner when you want something warm and filling.

Ingredients
  

  • Olive oil
  • 1 clove garlic minced
  • 1/2 onion chopped
  • 1 package of turkey sausage about 1 lb
  • 1 zucchini sliced
  • 1 yellow squash sliced
  • 1 red bell pepper chopped
  • Your favorite tomato sauce about 2 cups
  • Salt and pepper to taste

Instructions
 

  • In a large pot, heat a drizzle of olive oil over low heat. Add garlic and onion and sauté for about 5 minutes, until the onion becomes translucent.
  • Add turkey sausage and cook on low for about 5 minutes, breaking it up into bite-sized pieces.
  • Add zucchini, yellow squash, and red bell pepper. Sauté until the veggies are fork tender.
  • Pour in tomato sauce and stir to combine. Let it simmer for a few minutes until everything is heated through.
  • Season with salt and pepper to taste. Serve warm and enjoy!
