Vegan Tofu Fried Rice

Whip up a delicious and healthy meal with this Vegan Tofu Fried Rice, where crispy tofu meets savory vegetables and fluffy rice in a flavorful stir-fry. It’s a quick, plant-based twist on a classic favorite that’s both easy and delicious!

Ingredients
  

  • 1 cup broccoli, diced
  • 1 cup marinated tofu, cubed
  • 1/2 cup red onion, diced
  • 1/2 cup cabbage, shredded
  • 1/2 cup red cabbage, shredded
  • 1 cup cooked white rice (best if day old rice and frozen rice works too)
  • 1 tablespoon soy sauce
  • 1/4 teaspoon sesame oil
  • Seasonings: garlic powder, salt, pepper, onion powder

Instructions
 

  • First, cook your rice according to the package.
  • Next, cut up your onions, cabbage, and broccoli. Then, cube your tofu.
  • Add a drizzle of olive oil to the pan. Add your broccoli first since it'll take the longest to cook.
  • Cook the veggies on medium heat for about 4-7 minutes or until the onions become nice and caramelized! Remember to add in your seasonings!
  • Add in your tofu, then add white rice and mix until everything is evenly combined!
  • Then add sesame oil, soy sauce, garlic powder onion powder and mix it all together, until well combined (side note: butter is incredible in this, totally optional, but I highly suggest it)!
  • Top with sesame seeds and enjoy!!
