Veggie Egg Wrap

This veggie-packed egg wrap is the perfect way to start your day with a burst of flavor and a healthy dose of greens, making it quick, easy, and delicious!

Ingredients
  

  • 1 tortilla I used a spinach one
  • 2 eggs
  • 1/4 onion chopped
  • 1/2 cup shredded kale
  • 1/4 cup sliced mushrooms
  • Sprinkle of shredded cheese
  • Sprinkle of Everything But the Bagel EBTB seasoning

Instructions
 

  • In a frying pan on medium heat, add a drizzle of olive oil and add in your chopped onion and cook for 3-4 minutes
  • Then add in your mushrooms and kale and cook for another 3-4 minutes
  • Then add in your eggs and scramble so that everything is well mixed! I added some EBTB seasoning and right before you are about to take the eggs off, add in your cheese so it has the chance to melt slightly!
  • Add egg mixture to your tortilla and you’ve got a quick, easy and delicious breakfast! Feel free to add some avocado or hot sauce
