Creamy Butter Beans

Meet your new favorite winter weeknight meal. This creamy butter beans dish is plant-based, delicious, and oh so cozy!

Ingredients
  

  • 15-20 oz jumbo butter beans
  • 1 tbsp olive oil
  • 3 cups packed spinach
  • 1.5 tbsp tomato paste
  • tbsp garlic minced
  • ½ white onion diced
  • ¼ cup basil
  • cup half-and-half
  • ½ cup water
  • ½ cup grated parm
  • 1-2 slices toast optional

Instructions
 

  • To prep, mince your garlic, dice your white onion, and chop your basil and spinach.
  • Add olive oil to a saucepan over medium heat on the stove. Then add in the garlic and onion and sauté for 5 minutes until translucent.
  • Add in your tomato paste and mix together.
  • Then pour in half-and-half and water. Mix and simmer for 2-3 minutes while stirring.
  • Next, add in your jumbo butter beans and spinach. Let it simmer for 2-3 minutes.
  • Top with chopped basil and grated parmesan.
  • Enjoy on its own or with a slice or two of toast!
