Game Day Sweet Potato Nachos

These nachos are a fun twist on the classic game day snack, swapping tortilla chips for crispy roasted sweet potato rounds.

Ingredients
  

  • 2 large sweet potatoes slightly peeled and sliced
  • 1 cup shredded cheese
  • 6 oz ground beef
  • 1/2 lime squeezed, to top
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1 tbsp taco seasoning

Optional for topping

  • 1 large avocado sliced
  • greek yogurt dollops as a sour cream alternative
  • green onions diced
  • red onion diced
  • tomatoes diced
  • black beans

Instructions
 

  • Preheat oven to 375°F.
  • Toss sweet potato slices with olive oil, chili powder, and salt. Spread evenly on a baking sheet in a single layer. Bake for 25–30 minutes, flipping halfway, until tender and lightly crisped.
  • Remove sweet potatoes from the oven and sprinkle shredded cheese evenly over the top. Return to oven for 5 minutes, or until cheese is melted and bubbly.
  • Heat a skillet over medium heat. Add ground beef and cook until browned, about 5–7 minutes.
  • Stir in taco seasoning and a splash of water if needed to coat. Simmer 1–2 minutes.
  • Plate the sweet potatoes and top with the seasoned ground beef plus any optional toppings (avocado, Greek yogurt, green onions, red onion, tomatoes, black beans).
