Healthified Spinach & Artichoke Dip with Sweet Potato "Chips"

Ok so my favorite dip (besides guacamole) is spinach and artichoke dip!! I wanted to try and make it a little healthier, so I experimented and it actually came out SO GOOD!!!

Ingredients
  

For the Dip

  • 2 cups baby spinach
  • 1 can whole artichoke hearts drained and broken into pieces
  • 3 oz light cream cheese
  • ½ cup plain Greek yogurt
  • 1 cup shredded Parmesan and mozzarella blend plus extra for topping
  • 1 tablespoon minced garlic
  • Salt and pepper to taste

For the Sweet Potato "Chips"

  • 3 large or 6 small sweet potatoes thinly sliced
  • Olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F. In a large bowl, combine the baby spinach, artichoke hearts, light cream cheese, Greek yogurt, shredded cheese blend, minced garlic, salt, and pepper. If needed, pop the mixture in the microwave for about 20 seconds to help soften everything for easier mixing.
  • Top the dip with a generous handful of extra Parmesan and mozzarella.
  • Arrange the sweet potato slices on a baking sheet in a single layer. Drizzle with olive oil and sprinkle with salt and pepper.
  • Place both the dip and the sweet potato chips in the oven and bake for about 20 minutes.
  • Optional Broil: For extra crispiness, broil the sweet potato chips for 2-4 minutes at the end. You can do the same for the dip to get a golden, crispy cheese layer on top-because you know I love everything extraaaa crispy!
