Healthy Creamed Spinach

Enjoy a lighter take on a classic with this Healthy Creamed Spinach, featuring sautéed spinach with a rich blend of cheeses and Greek yogurt. This creamy side dish is both delicious and nutritious, perfect for complementing any mea!!

Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 cup white onion, finely diced
  • 2 cloves garlic, minced
  • 8 cups spinach
  • 2 tablespoons half and half
  • 1/4 cup shredded mozzarella
  • 1 1/4 cup shredded parmesan
  • 2 tablespoons butter
  • 1/4 cup Greek yogurt
  • Salt & pepper, to taste

Instructions
 

  • Add olive oil, onion and garlic to a sauté pan and cook for 2-3 minutes.
  • Then add in spinach and cover for a minute or two until the spinach goes down. Add salt and pepper to taste.
  • Then add half & half and mix well. Then add shredded mozzarella and parmesan cheese, butter, greek yogurt and mix well.
  • It will be a little liquidy, so to finalize the dish, I added 1/2 tbsp of flour just to thicken it up and make it the perfect consistency!
    I was planning to eat this with a fork but it actually tastes 10 times better with chips as a dip! But could absolutely be a great side dish for any meal. xx
