Vegan Chickpea Salad

If you’re craving something healthy yet totally satisfying for lunch, THIS recipe is for you! It’s creamy, protein-packed, and so versatile—great on bread, in lettuce wraps, or scooped up with pretzel chips.

Ingredients
  

  • 1 can of chickpeas rinsed and drained
  • 1/2 red onion diced
  • 2-3 celery stalks chopped
  • 4-6 green onions chopped
  • 1/2 cup veganaise or regular mayo if not vegan
  • 1 tbsp tahini
  • 1 tbsp mustard
  • Salt and pepper to taste

Instructions
 

  • Rinse and drain your chickpeas. Place them in a bowl and lightly mash with a fork or handheld masher—just enough to break them up but leave some texture.
  • Add the chopped celery, red onion, and green onions to the bowl.
  • Stir in the veganaise, tahini, mustard, salt, and pepper until everything is well coated.
  • Serve on bread, in lettuce wraps, or with crackers or pretzel chips. It’s also delicious with avocado!
