Start your day with these easy, cheesy, healthy-ish breakfast enchiladas! Packed with soft eggs, savory sausage (or your choice of protein), and topped with fresh avocado and green onion, they’re a fun and flavorful way to upgrade your morning! 🍳

THE RECIPE:
Preheat oven to 375°F.
Crumble chicken sausage (or bacon/pork sausage) into a heated skillet and cook lightly until just browned (substitute black beans for vegetarian or add them in for more protein)!
Whisk together 5-6 eggs in a bowl. Pour them into the sausage mixture and cook until just soft. You don’t want the eggs to fully cook, since they’ll bake in the oven!
Heat up 6 corn tortillas in the microwave for 20 seconds to soften, so they don’t break when folding.
In a baking dish, pour in half of the green salsa or enchilada sauce and spread evenly.
Lay out the corn tortillas and divide the eggs and sausage mixture evenly among them, and roll up. Place the rolled tortillas seam-side down in the baking dish.
Sprinkle ⅔ cup shredded cheese on top.
Bake in the oven for 8–10 minutes, or until the cheese is melted and bubbly!
Remove from the oven and top with sliced avocado, chopped green onions, and the other half of green salsa or enchilada sauce.
Serve right away or save for an easy, delicious meal prep option!!
