These oooey, goooey Healthy Pumpkin Flourless Brownies are your new favorite treat! They’re so good you wouldn’t even know they’re healthy!
SERVING SIZE: 9 brownies
THE RECIPE:
Preheat the oven to 350°F. Grease an 8×8 inch baking dish.
In a medium bowl, whisk together the pumpkin purée, egg, melted butter, maple syrup, vanilla extract, and nut butter until smooth. Stir in the baking soda, salt, and cacao powder until fully combined and no dry spots remain.
Fold in chocolate chips and mix gently to distribute evenly through the batter.
Spread the batter evenly into the prepared baking dish and sprinkle a handful of extra chocolate chips on top.
Bake for 35 minutes.
NOTE: Because these are flourless they won’t set perfectly like regular brownies, though they are my favorite when they’re gooey!!
Let brownies cool in the pan for at least 15 minutes before slicing. ENJOY!!
For a little aesthetic, I love to sprinkle some powdered sugar on top. It doesn’t take much powered sugar, but it elevates the appearance!
These would taste SO good with vanilla ice cream or even greek yogurt!
