This easy and cozy Tortellini Soup features Italian sausage, carrots, spinach, and basil in a silky tomato-cream broth. One of my cold-weather (or all weather!) favorites!
SERVING SIZE: 4
THE RECIPE:
Peel the carrots, then dice them up along with the onions.
Heat olive oil in a large pot over medium heat.
Then, add the sausage to the pot and breaking it up with a spoon or masher. Cook for 8-10 minutes or until browned.
After the sausage is browned, remove it from the pot. Set it aside until it’s ready to add back in.
In the same pot, add in the diced carrots and onion. It’s okay if there are some remnants in the pot from the sausage, it makes good flavor!
Add the tomato paste to the pot and stir consistently, until the paste is slightly darkened.
Season with salt, garlic powder, pepper, and Italian seasoning.
Pour in the chicken broth. Bring to a boil, toss in the tortellini, then reduce to a lively simmer.
Dice up spinach and basil.
After 5 minutes of the tortellini cooking, add your spinach, and basil, and cook just until the tortellini is al dente.
Once the tortellini is about to be done, lower heat to more of a simmer, stir in cream and parmesan until smooth. Taste and adjust seasoning.
Top with Parmesan and basil. Enjoy!
