Welcome to a twist on everyone’s favorite Marry Me Chicken that’s creamy and loaded with protein + fiber. This version swaps heavy cream for blended cottage cheese and adds hearty white beans for added nutrition. More importantly, it’s SO GOOD!
SERVING SIZE: 3-4
THE RECIPE:
Blend the cottage cheese with a splash of water until smooth and creamy. Set aside.
Heat a drizzle of olive oil in a large skillet over medium heat. Season chicken breast with salt and pepper, then sear for 2–3 minutes per side until golden brown (they don’t need to be fully cooked yet). Remove and set aside.
In the same skillet, add a touch of water to the pan to deglaze, and sauté the minced garlic and onions for a couple minutes until fragrant.
Stir in the tomato paste and cook for 1 minute to deepen the flavor. Add the chopped sun-dried tomatoes and cook another minute.
Pour in the blended cottage cheese and stir until smooth. Mix in the grated Parmesan cheese and stir over low heat until the sauce thickens slightly.
Return the seared chicken tenders to the skillet and spoon the sauce over them. Simmer on low for 8–10 minutes, until the chicken is fully cooked and everything is warmed through.
Stir in the drained white beans and fresh basil just before serving. Taste and adjust seasoning with extra salt, pepper, or Parmesan for garnish.
Great over pasta or rice!!

1 1/2cupscottage cheeseblended with a splash of water
3/4cupdiced onion
1/2cupgrated Parmesan cheese
1/3cupsundried tomatoes
1 1/2tbsptomato paste
1/2tspsalt
1/2tsppepper
2-4clovesgarlicminced
handful of basil
Instructions
