THE RECIPE:
Set your oven to 400°F.
Fill a pot with water and bring it to a boil. Add your mini potatoes to the pot and let them boil for 20 minutes.
Take the potatoes out of the water and let them cool for 15-20 minutes.
Take out a baking sheet and drizzle about a tablespoon of olive oil on the bottom. Put the potatoes on the baking sheet and smash each one using the bottom of a cup.
Add chili powder, garlic powder, salt, and pepper onto the potatoes and spray or drizzle some more oil on top.
Put the baking sheet in the oven and bake for 20 minutes at 400°F.
While that’s baking, cook your bacon by your preferred method and crumble it up. Then dice your green onion and shred your sharp cheddar cheese.
After the potatoes have baked for 20 minutes, add the shredded cheese on top and then bake again for three minutes until the cheese has melted over the potatoes.
Top with your crumbled bacon, green onion, and as much sour cream as you’d like.
